Soup Sunday with Kasia Bosne: and some more nudity (sorry).

Last week’s geo-technical inadequacies meant that the little pixies responsible for serving up your Soup Sunday were on strike. I’m sorry about that.

Today brings good news, however. I’m now back in Istanbul where the Internet signal is as plentiful as the number of kebab shops.

Not only that, but I have also managed to remain fully-clothed for a number of consecutive days. (Click here if you don’t know what I’m talking about).

Actually, I tell a lie – I had a wonderful Turkish bath this afternoon, but at least the therapist wielding the scrubbing brush was female this time.

But the best news of all is that today’s recipe is a twist on every Spaniard’s fave summer dish, gazpacho, brought to you by Kasia Bosne, Polish by birth, fellow Hippocrates Health Educator and fashionista extraordinaire.

You’d have to meet Kasia to understand what I mean, but let’s just say she puts the glamorous into green.

She may be fanatical about what’s on the outside, but refreshingly, she’s just as focused on what lies beneath.

Starting out in the flagship stores of Giorgio Armani and Gianni Versace, Kasia now runs her own store: “Boutique on 57”, in New York City.

Kasia set up shop in order to offer women discounted luxurious fashion from the most sought-after designer labels. And it’s not a bad place to do a little celebrity spotting, either. Even the red carpet brigade can’t resist their bargains, apparently.

“At “Boutique on 57”, we are as passionate about health, beauty, and nutrition as we are about fashion,” says Kasia. “How can we be beautiful if we don’t take care of our health?”

Good point.

Hot on the (Manolo Blahnik) heels of her recent Health Educator certification, Kasia is about to head off to the Matthew Kenney Culinary School, in Santa Monica, to polish her raw food cookery skills.

But it’s not all spiralized zucchini and Braggs – once she completes the course, Kasia will have a black belt in raw chocolate and pastry-making too.

And once she’s been, I will definitely be pestering Kasia to hand over some of the recipes for my website (coming VERY soon), but for now – and on the subject of soup, no less – I bring you the recipe which Kasia herself describes as “divine”. (It’s what she makes at the end of every Wednesday’s fast).

Kasia’s Green Gazpacho Soup

Serves 1-2

Green gazpacho soup

Ingredients

1 stick chopped celery

1/2 avocado

1/2 chopped cucumber

1 clove of garlic

1/2 small turnip

1tbsp of pizza seasoning (or make up a tablespoon with oregano and basil – ed)

1tbsp nama shoyu sauce

1 small piece ginger, peeled

1 small carrot, roughly chopped

4oz of green juice (equal amounts of sunflower sprouts, pea shoots, cucumber, ginger, celery)

Method:

Blend all ingredients together without the juice.

Add the juice when a smoothie consistency is achieved.

Dice additional 1/2 of avocado, a little shredded carrot and turnip. Sprinkle over soup.

Garnish with sprouts, chia seeds and parsley/chives.
